Recipes Potato Salad (Vegetarian, Side dish)

    • 1 pound cubed red potatoes with peels, optional (about 4 cups)
    • 1 hard cooked egg, chopped
    • 1/4 cup green onions, finely chopped
    • 2 tablespoons nonfat plain yogurt
    • 2 tablespoons nonfat mayonnaise
    • 1-1/2 teaspoons Dijon mustard
    • 2 teaspoons chopped dill pickle
    • 1/8 teaspoon garlic powder
    • 1/8 teaspoon white pepper

Place potato cubes in a medium saucepan; cover with water and bring to a boil. Cover; reduce heat and simmer 12-15 minutes, or until potatoes are tender. Drain and let cool slightly. Mix dressing ingredients (4-9) together. Combine potatoes, chopped egg and green onions with dressing. Cover and chill.
