Recipes Grits and Corn Pudding (Side dish, Vegetarian)

    • 1 cup grits
    • 1 teaspoon salt
    • 1/2 cup low fat milk
    • 1 (15-ounce) can creamed corn
    • 1 tablespoon reduced fat butter
    • Pinch salt
    • Dash of cayenne
    • Dash of freshly ground black pepper
    • 1 cup grated 2% Cheddar cheese
    • 3 eggs, beaten

Cook grits in 4 cups of water with salt, stirring constantly. When grits come away from the sides of the pan, remove from heat and let cool. Add milk, corn, butter, salt, cayenne and pepper, stirring to combine. Stir in cheese and fold in eggs to combine. Pour into buttered casserole and bake for 30 minutes in a 350-degree oven. This is a great dish for a weekend brunch.
