Recipes Italian Veggie Toss (Vegetarian, Side dish)

    • 1 small onion, halved and thinly sliced
    • 2 medium zucchini, cut in half lengthwise and cut into _-inch disks
    • 2 medium yellow squash, cut in half lengthwise and cut into _-inch disks
    • 1/2 cup sliced mushrooms
    • 1 teaspoon dried Italian Seasoning
    • 1/4 teaspoon black pepper
    • 2 teaspoons olive oil
    • 1 medium tomato, cut into quarters
    • 1 tablespoon fresh grated Parmesan cheese

In a shallow 2-quart microwave safe casserole add the sliced onion, zucchini, squash, mushrooms, Italian seasoning and pepper, toss with the olive oil. Cover with a sheet of waxed paper or plastic wrap and microwave on high for 4 minutes. Remove, toss and cook for an additional 3-4 minutes or until crispy tender or desired doneness. Add tomato and Parmesan cheese and heat for 1-2 minutes more.
