Recipes Chocolate Zucchini Cake (Dessert, No artificial sweeteners, Vegetarian)

Ingredients
    • nonstick cooking spray
    • ½ cup butter
    • 1¾ cups sugar
    • ½ cup light sour cream
    • 2 eggs
    • 1 tsp. vanilla
    • 2½ cups unbleached flour
    • ¼ cup cocoa
    • ½ tsp. baking powder
    • ½ tsp. salt
    • 1 tsp. soda
    • 1 tsp. cinnamon
    • 2 cups grated zucchini
    • ½ cup chocolate chips
Instructions

Preheat oven to 325° F. Spray a 9” x 13” baking pan with cooking spray. In a large mixing bowl, cream margarine, sugar and sour cream. Add eggs and vanilla, and beat well. Stir in flour, cocoa, baking powder, salt, soda and cinnamon. Fold in zucchini and chocolate chips. Spread in the prepared pan. Bake for 50 minutes or until toothpick inserted in center comes out clean. Sprinkle with powdered sugar.
