Recipes Oatmeal Scones (Dessert)

    • 1¾ cup unbleached flour
    • 1½ tsp. baking powder
    • ¾ tsp. baking soda
    • ½ tsp. salt
    • 1/3 cup sugar
    • 1/3 cup margarine
    • 11/3 cups old-fashioned rolled oats
    • ½ cup dried cranberries
    • 2/3 cup low-fat buttermilk
    • 1 egg

Preheat oven to 375° F. In a large mixing bowl, thoroughly combine flour, baking powder, baking soda, salt, and sugar. Add margarine and blend until it resembles coarse meal. Mix in oats, cranberries, and buttermilk until it forms a sticky dough. On a floured surface knead dough gently six times and roll out into a 1-inch thick round. Cut out rounds with a 3-inch round cutter dipped in flour, transfer to a lightly greased baking sheet. Brush scones with beaten egg and bake for 20 minutes, or until golden brown.
