Recipes Sweet Potato Hash & Egg On The Go (Vegetarian, Snack, Breakfast)

    • 1 Sweet Potato
    • 6 Eggs
    • Salt & Pepper, to taste

Preheat oven to 350.  Spray muffin cups with cooking spray.  Shred sweet potato.  Press shredded sweet potato into muffin cups, going up the sides a bit.  Bake sweet potato in oven for ten minutes.  Remove from oven and crack one egg in each cup.  Bake for another ten minutes or until desired doneness.  Season with salt and pepper to taste.
