Recipes Savory Potato Soup (Vegetarian, Soups, Extras)

    • 1 cup peeled diced potatoes
    • 1 cup chopped celery
    • ½ cup chopped onion
    • 1 tsp. salt
    • ¼ tsp. pepper
    • 2 tbsp. margarine
    • 2 tbsp. flour
    • 1 tsp. dill 
    • 1 cup nonfat milk

Put potatoes, celery, onion, salt and pepper in soup pot; add just enough water to cover potatoes and cook until potatoes are tender.  Melt margarine in skillet, add flour and milk, mixing well.  Add milk gradually, stirring constantly to make smooth sauce.  Cook 5 minutes; add drained vegetable mixture and dill and heat thoroughly.
