Recipes Orange Glazed Sweet Potatoes (Side dish, Vegetarian)

    • 3 cups sweet potatoes (about 2 1/2 lbs.), peeled and thinly sliced
    • 1 small lemon, thinly sliced
    • 2 tsp. reduced-fat margarine
    • 2 2/3 tbsp. orange juice
    • 1 tsp. grated orange rind
    • 3 1/2 tbsp. firmly packed brown sugar (or brown Sugar substitute)
    • Nonstick cooking spray

Preheat oven to 400F. Arrange potatoes and lemon slices in 13x9-inch baking dish coated with cooking spray; set aside. Melt margarine in small bowl. Add orange juice, orange rind and brown sugar to melted margarine; mix well to blend. Drizzle mixture over potatoes; cover dish with foil. Bake 35 minutes; uncover, stir and bake 30 minutes more.
