Recipes Roast Beef Sandwiches with Sweet and Sour Red Onions and Blue Cheese (Entree)

    • 2 cups thinly sliced red onions
    • 1/2 cup crumbled blue cheese
    • 2 tbsp. red wine vinegar
    • 12 tomato slices
    • 1 tsp. sugar
    • 8  oz. thinly sliced roast beef
    • dash of salt and pepper
    • 2 cups (packed) small watercress, sprigs
    • 4 large soft whole grain rolls toasted
    • 1 cup pickled onions



Combine onions, vinegar and sugar in medium bowl and sprinkle with salt
and pepper. Let stand until the onions are soft, tossing occasionally, at
least 1 hour and up to 4 hours. Place bottom halves of the whole grain rolls
on work surface and sprinkle with cheese. Top each half with 3 tomato
slices and 1/4 of the roast beef. Top each with 1/2 cup watercress and 1/4 cup
pickled onions. Cover with tops of rolls. Cut each sandwich in half.
