    • 2 ½-inch slices French baguette
    • 3 tablespoons low-fat ricotta
    • 1 roma tomato
    • 1 teaspoon olive oil
    • salt and pepper to taste

     

Instructions

Layer baguette, ricotta and tomato and drizzle with olive oil.  Season with salt and pepper and broil in oven for 3-4 minutes until hot and toasty.
