Recipes Super Quick Black Bean Soup (Entree, Soups)

    • 1/2 C chopped red onion
    • 2 tsp olive oil
    • 1 tsp minced garlic
    • 3/4 tsp oregano
    • 3/4 tsp cumin
    • 15 oz black beans, rinsed and drained
    • 2 C chicken broth
    • 1 tbsp feta cheese



In a large saucepan, combine onion, oil, garlic, oregano, cumin, and salt to taste. Cook, stirring, over medium heat until softened, about 3 minutes. Stir in beans and broth. Reduce heat to medium-low. Cook, stirring occasionally, for 10 minutes. Mash some beans against side of pan. Serve sprinkled with feta and cilantro (optional).
