Recipes Vegetable Medley (Vegetarian, Side dish)

Number of Servings
    • 1 can Rotel Tomatoes
    • 2 yellow squash (sliced)
    • 2 sliced zucchini
    • 1/2 head of cabbage
    • 1 eggplant, cubed
    • Sliced mushrooms (amount doesn't matter)

Put in pot and simmer until vegetables are tender. Great side-dish.
