Recipes Carrots Roasted with Spanish Paprika (Vegetarian, Side dish, Holidays)

    • 2 tbsp. olive oil
    • 1½ tsp. Spanish smoked paprika
    • 1 tsp. kosher salt
    • ½ tsp. freshly ground black pepper
    • 2½ lbs. medium carrots, peeled and halved lengthwise
    • 2 tbsp. finely chopped fresh cilantro



Place a jellyroll pan on bottom oven rack. Preheat oven to 450° F. Combine olive oil, paprika, salt, pepper and carrots in a large bowl and toss well. Arrange carrot mixture in a single layer on a preheated pan. Bake at 450° F for 25 minutes or until tender, stirring after 12 minutes. Sprinkle with cilantro.
