Recipes Garlic and Herb Standing Rib Roast (Entree, Holidays)

    • 1 (5 lb.) standing rib roast, trimmed
    • 1½ tbsp. chopped fresh thyme
    • ½ tsp. salt
    • ¼ tsp. freshly ground black pepper
    • 4 garlic cloves, minced
    • parsley sprigs (optional)
    • roasted garlic heads (optional)
    • nonstick cooking spray



Preheat oven to 450° F. Place the roast on a broiler pan coated with nonstick cooking spray. Combine thyme, salt, pepper and garlic cloves and rub over the roast. Bake at 450° F for 45 minutes. Reduce heat to 350° F (do not remove roast from oven) and bake for 1 hour and 20 minutes or until a thermometer registers 145° F (medium-rare) or desired degree of doneness. Let stand for 10 minutes before slicing. Garnish with parsley and roasted garlic, if desired.
