Recipes Spicy Pickled Green Beans (Holidays, Side dish, Vegetarian)

    • 2 cups water
    • 2 cups white vinegar
    • 3 tbsp. kosher salt
    • 1½ tbsp. sugar
    • 3 tbsp. thinly sliced garlic (about 8 cloves)
    • 8 fresh dill sprigs
    • 4 small dried hot red chiles
    • 1½ lb. green beans, trimmed



Combine water, vinegar, salt and sugar in a large saucepan and bring to a boil. Remove from heat and add garlic, dill and peppers to the pan. Let stand for 1 minute. Pour vinegar mixture over the beans in a large glass bowl. cover and refrigerate 1 week, stirring occasionally.
