Recipes Spicy Eggplant Casserole (Entree, Vegetarian)

    • 2 small eggplants, peeled and cut into 1-in. cubes
    • 1 1/2 tbsp. chopped onion
    • 1 1/2 tbsp. chopped celery
    • 1 1/2 tbsp. chopped bell pepper
    • (1) 10-oz. can diced tomatoes with chilies
    • 1/2 cup soft bread cubes
    • salt and cayenne pepper to taste
    • 2 oz. 2-percent cheddar cheese, shredded
    • nonstick cooking spray



Preheat oven to 400° F. Salt eggplants and let sit 20 minutes to draw out bitterness. Rinse and drain. In medium bowl, combine eggplants, onion, celery, bell pepper, canned tomatoes, bread cubes, salt and pepper. Pour into 9 x 9-inch baking dish coated with cooking spray; top with cheese and bake 20 to 25 minutes.
