Recipes Veggie Pasta Salad (Vegetarian, Side dish)

Number of Servings
    • 4 ounces bow tie pasta
    • 2 cups chopped leftover vegetables (broccoli, asparagus, green beans, onions, peppers)
    • 1/2 cup sliced grape tomatoes
    • 1/2 cup crumbled seasoned feta cheese (or any left over shredded cheese)
    • 1/2 cup light balsamic vinaigrette dressing
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper

Cook pasta according to package directions, omitting salt and fat. Drain and toss with remaining ingredients in a large bowl. Chill and serve.
