Recipes Zucchini with Tomato and Cheese (Side dish, Vegetarian)

Number of Servings
    • 3 cups zucchini, sliced
    • 1 onion, chopped
    • 1 Tbsp. vegetable oil
    • 1 tsp. salt
    • 2 oz. shredded low-fat cheese
    • 1 cup canned tomatoes

Brown zucchini and onion in oil, cover and simmer 10 minutes. Add rest of ingredients and heat until cheese melts.
