Recipes Mustard Chicken (Entree)

    • 4 4-oz. boneless chicken breasts
    • 1/2 tsp. dried dill
    • 1/2 tsp. salt
    • 1/4 tsp. black pepper
    • 1/2 cup apple cider
    • 2 tbsp. Dijon mustard
    • 1 tbsp. olive oil
    • 2 cloves garlic, minced
    • 1/3cup fresh parsley, chopped
    • 1/4 cup water



Preheat oven to 350 F. On a cutting board cover each breast with plastic wrap and pound with a meat mallet until 1/2 inch thick. Heat oil in a large nonstick skillet; add garlic and cook for 2 minutes over medium heat. Add chicken breasts and brown 3 minutes on each side. Transfer chicken to a 1 1/2 quart shallow casserole. Put cider, water, mustard, dill, salt and pepper into the skillet; stir to mix with the chicken drippings. Bring to a boil and cook 1 minute. Pour over chicken in casserole. Cover and bake 20 min¬utes. Add parsley and baste with sauce and bake an additional 5 minutes.
