Recipes Mini Cajun Meat Loaves (Entree)

    • 2 lbs. lean ground beef
    • 3/4 cup finely chopped onions
    • 1/4 cup finely chopped green onion tops
    • 1/2 cup finely chopped celery
    • 1/2 cup finely chopped bell pepper
    • 2 tsp minced garlic
    • 3 Tbsp Pickapeppa sauce (or your favorite steak sauce)
    • 1 Tbsp Worcestershire sauce
    • 1/2 cup ketchup
    • 1/2 cup skim milk
    • 3 egg whites
    • 1 cup bread crumbs
    • 1 tsp pepper
    • 1/2 tsp cayenne pepper (optional)
    • 1 tsp salt 
    • Topping:  Mix together and set aside.
    • 1/2 cup ketchup
    • 1 Tbsp Pickapeppa sauce

Preheat oven to 350 degrees.  In a large bowl combine all ingredients except topping.  Spray large baking dish (might need 2) with PAM.  Divide into 10 equal portions and shape into loaves in pan.  Bake uncovered about 20-25 minutes then remove from oven and apply topping.  (If you want to freeze some for later, allow the loaves to cool and place in freezer.  They freeze better without the topping) Put loaves back in oven and bake with topping another 10-15 minutes until done. You can also make 1 or 2 loaves, just increase cooking time and divide into 10 servings.
