Recipes Bread Pudding (Holidays, Dessert, Vegetarian)

    • 2 1/2 cups bread, cubed
    • 2 cups warm skim or 1% milk
    • 1 cup egg substitute
    • 6 packets artificial sweetener (not aspartame)
    • 1 tsp. vanilla extract
    • 1/4 tsp. cinnamon
    • 1/4 tsp. nutmeg
    • 3/4 cup raisins
    • Nonstick vegetable cooking spray

Combine first seven ingredients in large bowl; stir well. Add raisins. Spoon mixture into a 6-cup muffin tin that has been coated with cooking spray. Bake for 25 to 30 minutes in preheated, 350-degree oven or until knife inserted in middle of pudding comes out clean. Top with light whipped topping and dust with cocoa powder.
