Recipes Spicy Chicken Stir-Fry Fettuccine (Entree)

    • 6 oz. Fettuccine noodles
    • 2 tbsp. olive oil
    • 3 garlic cloves, minced
    • 3/4 tsp. black pepper
    • 1 lb. Chicken tenders
    • 1/2 tsp. salt
    • 8 oz. Mushrooms, sliced
    • 1 10-oz. Can Rotel tomatoes
    • 1/4 cup fresh Parmesan cheese, grated



Cook pasta according to package directions (omitting salt and fat).  Drain well and leave cooked pasta in pot.  Mix oil, garlic and pepper in medium bowl; add chicken and toss to coat.  Heat large nonstick skillet over medium heat and stir-fry chicken 2 to 3 minutes.  Remove from skillet with slotted spoon and sprinkle with salt.  Add mushrooms to skillet and stir-fry for 3 minutes.  Add tomatoes and cooked chicken, stir well; then pour mixture into pot of pasta.  Heat if needed.  Add Parmesan and toss well.
