Recipes Brunch Casserole (Breakfast)

    • 4 slices wheat bread, crusts removed
    • 2 oz. Turkey sausage
    • 1/4 cup mushrooms, chopped
    • 1 tsp. onion, chopped
    • 4 eggs, beaten (or 1 cup egg substitute)
    • 1 cup nonfat milk
    • 1/8 tsp. black pepper
    • 1/4 tsp. salt
    • 1/8 tsp. granulated garlic
    • 2 oz 2% cheddar cheese, shredded
    • nonstick cooking spray



Line bottom of 9x9-inch casserole dish with bread.  Spray skillet with nonstick cooking spray.  Sauté sausage until done.  Remove from skillet and set aside.  Sauté mushrooms and onions until tender.  Crumble sausage and combine with mushrooms and onion.  Sprinkle mixture over bread.  Combine eggs, milk and seasonings and pour over top.  Sprinkle with cheese.  Cover and refrigerate overnight.  Before cooking, set out for 15 minutes.  Bake at 350 F. 40 to 45 minutes.
