Recipes Mediterranean Beef Stew (Entree)

Number of Servings

    2 medium zucchini, cut into bite-sized chunks

    3/4 pound beef stew meat, cut into 1/2-inch pieces

    1 14.5-ounce cans Italian-style tomatoes, undrained

    1/2 teaspoon pepper

    1/4 teaspoon cinnamon


Place zucchini in bottom of a 3 1/2-quart electric slow cooker or stockpot.  Add beef and remaining ingredients.  Cover and cook on high setting 5 hours (low simmer if using stockpot) or until meat is tender.
