Recipes Veggie Cheese Quesadillas (Entree)

    • nonstick cooking spray
    • 2 (6-inch) reduced fat whole wheat tortillas
    • 2 oz. reduced-fat Colby-Jack cheese, grated
    • 1 tbsp. reduced-fat sour cream
    • 1/2 cup frozen broccoli florets, cooked
    • 1/4 cup mushrooms, sliced
    • 1/4 cup salsa



Coat a nonstick skillet with cooking spray and heat. Put one tortilla in pan and sprinkle with cheese. Place broccoli and mushrooms on top of cheese. Cover with the second tortilla and brown on both sides. Remove from pan and let sit a minute. Slice and serve with sour cream and salsa.
