Ingredients
    •   1   16-oz. can solid-packed pumpkin
    •   1   13-oz. can evaporated skim milk
    •   1   egg
    •   2   egg whites
    •   1/2 cups reduced-fat buttermilk biscuit mix
    •   8   packets Sweet & Low (3/4 tablespoon)
    •   1/2 tsp. ground nutmeg
    •   2   tsp. vanilla
    •   1/2 tsp. ground cinnamon
    •   1/2 tsp. ground ginger
    •   Vegetable cooking spray
    •    Lite Cool Whip for garnish

     

Instructions

Place all ingredients into bowl of a food processor or blender and process until smooth. Pour into pie pan that has been coated with cooking spray. Bake at 350° F for 45-50 minutes or until center is puffed up. Let cool and put a dollop (1 teaspoon) of Cool Whip on each slice of pie.
