Recipes Oven Roasted Vegetables (Holidays, Side dish)

    • 1 cup cauliflower pieces (bite-sized)
    • 1 cup broccoli pieces (bite-sized)
    • 1/2 cup sliced celery, cut into bite-sized pieces
    • 1/3 cup chopped red onion
    • 1 cup mushroom caps
    • 1/4 cups sliced carrots
    • 1/3 cup cherry-tomato halves
    • 1 tbsp. lemon juice
    • 1/4 tsp. dried dill weed
    • 2 tbsp. low-fat ranch dressing
    • Butter-flavored nonstick cooking spray



Preheat oven to 400o F.  In large bowl, combine cauliflower, broccoli, celery, onion, carrots, mushrooms and tomatoes, toss to mix.  Arrange vegetables on baking pan coated with cooking spray.  Spray vegetables lightly with cooking spray; bake 20 minutes or until tender.  While vegetables are cooking, use same bowl to combine lemon juice, dill weed and dressing, mix well and set aside.  Remove vegetables form oven, drain and return to bowl.  Toss to coat, serve hot.
