Ingredients
    • 8 boneless, skinless chicken breasts halves, diced
    • 3 4.5 oz. cans chopped green chilies
    • 1 15.5 oz. can pinto beans, rinsed and drained
    • 1 14.5 oz. can diced tomatoes
    • 1 11 oz. small can corn, drained
    • 1 14.5 oz. can tomatoes with green chilies
    • 1 10.7 oz. can low-fat cream of chicken soup
    • 1 large onion, chopped
    • 1 tsp. chicken bouillon
    • 1 tsp. minced garlic
    • 1/4 tsp. cumin
    • 1/4 tsp. oregano
    • 3/4 c. fat-free sour cream
    • 3/4 c. grated cheddar cheese
    • 24 baked tortilla chips
    • Chopped green onion to taste
    • Chopped fresh cilantro to taste

     

Instructions

Place all ingredients in order into slow cooker set to low heat. Cover and cook 7 to 8 hours (or 4 hours on high setting). Serve each topped with 1 tablespoon sour cream, 1 tablespoon cheese, 2 broken tortilla chips, and chopped green onion and cilantro to taste.
