Ingredients
    • 1 cup cooked Garbanzo beans
    • 2 cups diced tomatoes
    • 1 cup diced green bell pepper
    • 1 cup diced peeled cucumber
    • 1/2 cup fresh minced Italian parsley
    • 1/3 cup sliced green onions
    • 1/4 cup fresh lemon juice
    • 2 tablespoons water
    • 1 tablespoon olive oil
    • Salt and freshly ground pepper to taste

     

Instructions

Combine all ingredients in a large bowl and refrigerate for 1 hour before serving. Serving size equals 1-1/2 cups
