Recipes Penne Pasta Salad (Salad, Side dish, Vegetarian)

    • 2 cups penne pasta, cooked
    • 1/4 cup fat-free Italian dressing
    • vegetable cooking spray
    • 1 8-ounce can cannelloni beans
    • 1-1/2 cups frozen mixed sweet peppers
    • 1/4 cup crumbled feta cheese
    • fresh basil sprigs



Cook pasta according to package directions, omitting salt and fat; drain. Place pasta in a large serving bowl. Coat a non-stick skillet with cooking spray, and over high heat saute thawed peppers for 2-3 minutes. Add peppers, dressing, drained beans and cheese to pasta. Toss to coat well. Garnish with fresh basil.
