Ingredients
    • 3-4 medium size red potatoes (about 1 pound)
    • 1 tablespoon chopped green onions (optional)
    • 2 teaspoons diced pimento, drained
    • 1/4 cup nonfat mayonnaise
    • 1 tablespoon plain low-fat yogurt
    • 1 tablespoon low-fat sour cream
    • 1 tablespoon coarse ground prepared mustard
    • 1 tablespoon pickle relish
    • 1 teaspoon cider vinegar
    • 1/4 teaspoon celery seeds
    • dash garlic powder
    • salt and pepper to taste

     

Instructions

Cut potatoes into 1/2 inch pieces; place in a medium saucepan. Add water, cover and bring to a boil. Simmer for 15-20 minutes, drain. Combine potatoes with remaining ingredients while still warm. Cover and chill for about 2 hours.
