Recipes Beans and Rice Salad (Salad, Vegetarian)

Number of Servings
    • 2 cups cooked rice, cooled
    • 2 cups cooked black beans, drained
    • 2 cups chopped bell pepper (yellow, red or green)
    • 1 cup sliced celery
    • 1 cup diced tomatoes
    • 1/2 cup sliced red onion
    • 1/2 cup chopped cilantro
    • 3/4 cup salsa or picante sauce
    • 1 lime (juice)
    • 1 teaspoon salt



In a large bowl, combine rice, beans, peppers, celery, tomato, onion, and cilantro. Toss. In a small bowl, combine the remaining ingredients, mixing well. Pour dressing mixture over rice mixture. Mix well. Chill at least 2 hours or overnight.
