Recipes Confetti Rice Salad (Salad)

Number of Servings
    • 1 Large Red Bell Pepper (capsicum) chopped
    • 1 onion chopped
    • 400g Corn Kernels (drained)
    • 2 cups cooked Dongara or Basmati Rice (Low GI)
    • 1 cup celery chopped
    • 1 cup Shallot Chopped (Scallions)
    • 3 Large Carrots (chop into rounds)
    • 1 tablespoon fresh curly parsley



Cook Rice (Rice with water 1 fingernail above rice in glass microwave bowl) rice is steamed in microwave cooked 10 min til rice absorbs water (Fluff with fork and transfer to glass serving bowl.
While rice is cooking chop vegetables
Add other ingredients to cooked rice and mix together.

Serve with Grilled Meat or chicken/bbq meat or fish with crusty wholegrain bread rolls.
