Recipes Carrot & Raisin Salad (Salad)

    • 6 Tbsp. washed and drained raisins
    • 2 cups grated carrots
    • 1 cup drained, crushed pineapple
    • 1/3 cup light mayonnaise
    • 1 tbsp. lemon juice
    • 1/4 tsp. salt
    • 2 pkgs. of sugar substitute



Toss raisins, carrots and pineapple together. Set aside. Stir together mayonnaise, lemon juice, salt and sweetener and add to carrot mixture. Keep refrigerated.
