Recipes Quick & Easy Beet Salad (Salad)

    • 1 cup diced cooked beets
    • 1/2 cup frozen green peas, thawed
    • 2 tablespoons sliced green onions
    • 1 tablespoon chopped fresh parsley
    • 2 tablespoons fat-free Italian dressing
    • 1 cup romaine lettuce leaves
    • 2 ounces reduced fat Feta cheese, crumbled



Combine first 4 ingredients in a medium bowl. Pour dressing over mixture; toss gently. Cover and chill 2 hours. Arrange each with 1 cup of beet mixture over 1/2 cup romaine leaves top with 1/2 of the feta cheese and serve.
