Recipes Peachy Grilled Chicken Salad (Entree, Salad)

    • 1 cup chopped frozen peaches, slightly thawed
    • 1 tablespoon chopped crystallized ginger
    • 1 (9-ounce) jar mango chutney*
    • 2 tablespoons low-sodium soy sauce
    • 3 cups chopped cooked chicken
    • 1 cup chopped sweet red pepper
    • 1 (8-ounce) can chopped water chestnuts
    • Boston lettuce leaves



Combine first 4 ingredients in small saucepan. Bring to a boil, reduce heat, and simmer until thickened. Let cool. Combine remaining ingredients, except lettuce, in a large bowl, stirring well. Cover and chill thoroughly. Line plate with lettuce leaves and top with chicken salad.

*Look for chutney near the relishes, pickles and other condiments in your grocery store
