Recipes Mandarin Chocolate Pie (Vegetarian, Dessert)

    • 1-1/2 cups plus 1 tablespoon skim milk
    • 1 large chocolate flavored sugar-free instant pudding
    • 1 reduced fat graham cracker crust
    • 4 ounces fat-free cream cheese, softened
    • 1 tablespoon concentrated orange juice
    • 1 package Equal
    • 4 ounces Cool Whip Lite, completely thawed
    • cocoa powder with 1 pack Equal
    • Mandarin oranges, drained for garnish

Pour 1 1/2 cups of milk into medium bowl, add pudding mix and whisk until blended. While still thin, pour into pie crust, spread evenly if needed. This will thicken quickly. In a large mixing bowl, add softened cream cheese and orange juice concentrate and whip until smooth at low speed (about 2 minutes). Add Equal and whip for 1 minute more. Fold in thawed Cool Whip. Sprinkle pie with combined cocoa powder and Equal. Chill overnight. Garnish with mandarin oranges.
