Recipes Pecan Chicken Bites (Appetizer, Side dish)

    • 2 cups pecan chips, toasted; divided
    • 3 cups finely chopped cooked chicken (1 roasted chicken)
    • 1 can (10-3/4 oz) fat free cream of mushroom soup
    • 8 ounces reduced fat cream cheese, softened
    • 1/4 cup chopped pimento
    • 2 tbsp. finely chopped green bell pepper
    • 2 tbsp. finely chopped sweet onion
    • 1/2 tsp. granulated garlic
    • 1/4 tsp. salt
    • Freshly ground black pepper to taste
    • Tabasco to taste



In a medium sized bowl, combine 3/4 cup of the ground pecans with the remaining ingredients. Using your hands, divide and roll mixture into about 3/4-inch balls. Roll each ball in remaining pecan chips to coat. Refrigerate over night. Serve chilled or at room temperature with Creole Mustard Sauce.
