Recipes Southwestern Chicken Chili (Entree)

    • 4 3-ounce boneless, skinless chicken breasts
    • 14-1/2 ounce can diced tomatoes with peppers and onion
    • 15 ounce can red kidney beans
    • 8 ounce can tomato sauce
    • 1 package chili seasonings
    • 2 cups chicken broth (from cooking chicken)
    • onion powder
    • salt and pepper to taste

Boil chicken in water until tender. Reserve 2 cups of broth. Cut up in small pieces. In large pan, place reserved broth, diced tomatoes, beans, tomato sauce and chili seasoning. Season with onion powder, salt and pepper to taste. Add chicken to mixture and cook on low heat for 30 minutes.
