Recipes Lemon Pepper Chicken (Entree)

    • Vegetable cooking spray
    • 1 teaspoon olive oil
    • 4 (4-ounce) boneless, skinless chicken breasts
    • 1 teaspoon lemon pepper seasoning
    • 1/4 cup chicken broth
    • 1/4 cup balsamic vinegar
    • 1 teaspoon grated lemon peel

Place a large nonstick skillet over medium high heat and coat with cooking spray. Heat and add oil. While skillet is heating, sprinkle each chicken breast with the lemon pepper seasoning on each side. Add chicken to skillet and cook for 4-5 minutes on each side. (If you pound the breast out before hand, you will get a more even cooking time and more tender product) When done, transfer to a platter. Add broth, vinegar, and lemon peel to the hot skillet and stir constantly for 1-2 minutes. When mixture is thickened spoon sauce over the chicken breasts. Serve with steamed broccoli and brown rice.
