Recipes Crispy Oven Fried Chicken (Entree)

    • Olive oil non-stick cooking spray
    • 1/2 cup Italian dried bread crumbs
    • 1/4 cup grated Parmesan cheese
    • 2 tablespoons corn meal
    • 1/2 teaspoon cayenne pepper
    • 1 egg white
    • 1/2 teaspoon salt
    • 4 large bone-in chicken breasts with skin removed

Preheat oven to 450 degrees. Spray a 15 1/2-inch by 10 1/2-inch jellyroll pan with cooking spray. In a small pan, mix bread crumbs, cheese, corn meal and pepper. Whip egg whites and salt until frothy. Dip each piece of chicken in egg white mixture, then coat with bread crumb mixture. Place chicken in the pan; spray chicken lightly with spray. Bake chicken for 30-35 minutes or until coating is crisp and juices run clear.
