Number of Servings
    • 1 unbaked pie crust (Mrs. Smith's 9" shallow)
    • 4 tablespoons applesauce (all natural)
    • 1/4 teaspoon cinnamon
    • 1 teaspoon lemon juice
    • 2 tablespoons apricot preserves (all natural-no sugar added)
    • 2 medium tart apples (6 ounces each)
    • brown sugar substitute to equal 1 teaspoon

Preheat oven to 350 degrees. Invert one unbaked 9-inch pie crust into an 8-inch pie plate. Push dough halfway down the sides to form a tick crust around edge. Pinch top of dough and push finger against side to form a crimped pleat around edge. Prick bottom and bake at 350 degrees for 10 minutes, cool slightly. Spread 4 tablespoons applesauce over bottom of pie crust. Sprinkle with brown sugar substitute and cinnamon. Arrange thin slices of tart apples over applesauce. Sprinkle apples with 1 teaspoon lemon juice. Heat 2 tablespoons of sugar-free apricot preserves and coat top of tart. Place back in 350 degree oven for 30-35 minutes.
