Recipes Pineapple Cream Cheese Pie (Dessert, Vegetarian)

    • 2-8 ounce Fat-Free Cream Cheese
    • 1/4 cup Equal Measure
    • 1-8 ounce Cool Whip Lite
    • 1 teaspoon vanilla
    • 2 drops yellow food coloring
    • 1-20 ounce can crushed pineapple (in own juice), drained
    • Ingredients for Crumb Mixture:
    • 2 cups graham cracker crumbs
    • 2 tablespoons Equal Measure
    • 4 tablespoons unsweetened applesauce

Bring all ingredients to room temperature for about 1 hour. In a mixing bowl, cream the cheese and Equal Measure together, add the Cool Whip and mix well. Add the remaining ingredients and mix well. Set aside.

Steps for Preparation for Crumb Mixture: Combine all the ingredients. Place half of mixture in bottom of 10x12 inch pan. Pour cream cheese mixture over the crumb mixture. Sprinkle the remaining of the crumb mixture over the cream cheese mixture. Place in refrigerator for at least four hours to set.
