Recipes Grits & Sausage (Breakfast)

Ingredients

    2 oz. turkey sausage
    1/2 cup uncooked yellow or white grits (stone-ground are best)
    2 large eggs, beaten
    1/2 cup skim milk
    1/2 tsp. thyme, if desired
    1/8 tsp. garlic salt, if desired
    Nonstick vegetable cooking spray

Instructions

The night before, cook turkey sausage and crumble into small pieces. Cook grits according to package directions. Combine eggs, milk, thyme and garlic salt in medium bowl. Add a small amount of hot grits and mix well. Add to rest of grits. Mix well and pour into a loaf pan that has been coated with vegetable spray. Cover and refrigerate overnight. Next morning, remove from refrigerator and let stand 15 minutes before baking. Bake at 350° F for 45 minutes or until done.
