Recipes Broccoli Rice Quiche (Extras, Entree, Vegetarian)

    • 3 cups hot cooked rice (from 1 cup uncooked)
    • 6 oz. grated low-fat cheddar cheese
    • 6 eggs
    • 1 tsp. salt
    • 1/2 cup chopped onions
    • 1 (10 oz.) pkg. frozen chopped broccoli
    • 1/2 cup skim milk
    • 1/4 tsp. pepper
    • 1 (4 oz.) can sliced mushrooms, drained

Combine rice, 3/4 cup of the cheese, two slightly beaten eggs and 1/2 tsp. salt. Press firmly and evenly over bottom and sides of a greased 12” pizza pan or 2-9” pie pans. Set aside. Add onions to broccoli and cook according to package directions. Drain well. Beat remaining eggs slightly. Stir in milk, pepper, mushrooms and remaining salt. Add to broccoli and mix well. Spoon into crust. Bake at 375 degrees for 20 minutes. Sprinkle with remaining cheese. Bake 10 minutes longer. Cool a few minutes before cutting wedges.
