Ingredients

    Vegetable cooking spray
    4 ounces Healthy Choice Turkey Sausage, crumbled
    1/4 cup sliced green onions
    1 cup Southwestern Blend Egg substitute
    4 (8-inch) flour tortillas
    1/2 cup shredded 2% sharp Cheddar cheese
    1/4 cup salsa

Instructions

Place a large nonstick skillet over medium high heat. Coat with cooking spray and add sausage crumbles and green onions; saute until brown. Pour in egg mixture and cook until set or desired doneness. Spoon about 1/2 cup of the egg mixture into each of the tortillas, spoon 1 tablespoon of salsa into each and roll up. Serve with a piece of fresh fruit.
