Recipes Peachy Whole Grain Cookies (No artificial sweeteners, Dessert, Vegetarian)

    • 1 egg white
    • 1/2 tsp. almond extract
    • 1/3 cup margarine
    • 3/8 cup sugar
    • 3/8 packed brown sugar
    • 3/4 cup whole-wheat flour
    • 1/2 tsp. salt
    • 1 tsp. baking powder
    • 1 1/4 cups quick or regular oatmeal
    • 3/4 cup peaches, diced
    • 1/4 cup dates, chopped

Beat egg white with almond extract, margarine and sugars in mixing bowl. Combine flour, salt and baking powder. Add to egg mixture and mix well with electric mixer. Stir in oatmeal, peaches and dates. Drop by rounded (not heaping) tablespoons onto nonstick cookie sheet. Bake at 350° F for 15 minutes or until golden.
