Recipes Mango Jicama Salsa (Vegetarian, Side dish)

Number of Servings
    • 1 8-oz can pineapple tidbits, drained (reserve 2 tbsp. juice)
    • 1 cup peeled, chopped jicama
    • 1 medium mango, peeled, seeded and chopped
    • 1 large tomato, seeded and chopped
    • 1 green onion, sliced
    • 1-2 fresh jalapeno peppers, seeded and finely chopped
    • 1 tbsp. lime juice

Mix all above; cover and refrigerate until serving time or up to 24 hours.  To serve, slice roast.  Serve with sweet potatoes and Mango salsa.  If desired, garnish with cilantro.
