Ingredients
    • 1 cup instant rice
    • 1/2 cup onion, chopped
    • 1/4 cup skim milk
    • 4 ounces Velveeta Light
    • 2 tablespoons margarine, softened
    • 2 10-ounce packages chopped broccoli
    • 1 10 3/4-ounce can condensed reduced-fat cream of mushroom soup
Instructions

Preheat oven to 350. Combine all ingredients in a large bowl. Spoon into a 2-quart casserole dish and bake for 45 minutes.  Note: The instant rice is uncooked.
